Bacon Wrapped Dates Stuffed with Goat Cheese


We had a holiday party last night with the staff from work. I tried a brand-new appetizer that I had been seeing on several blogs. This recipe was one I found on www.thepinkfork.com.

Bacon Wrapped Dates Stuffed with Goat Cheese
1 container of Medjool dates (I bought California dates)
2-3 ounces of goat cheese
1 package of bacon (I used Kirkland thick-sliced brand)

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Cut a slit in each date. I had to removed the pits from mine, so this automatically created a space for the cheese. I put the goat cheese in a zip-close bag and softened in the microwave about 30 seconds. I cut a slit in one of the bottom corners of the bag and piped about 1/2 tsp into each date. I then wrapped about 1/3 of a slice of bacon around each stuffed date and secured with a toothpick. Space evenly on baking sheet so they are not touching. Bake for 15 minutes on first side. Flip over and back for another 10-12 minutes. Serve warm.
